Symbol

The XO symbol was derived from using a combination of the renowned XO Sauce – the ‘caviar of Asian sauces’ and also the XO used in quality Cognacs, where the XO represents ‘Extra-Ordinary’. In our kitchens we make our very own brand of XO sauce, using dried scallops and spices.

Design

Owner and local Developer Michael Collins built the three story complex, located at the Northern end of the popular Sunshine Beach shopping village, 17 years ago. In late 2009 he commenced a building project of extensive and meticulous renovations to the ground level and middle level, resulting in the brand new XO complex. Embassy XO restaurant and cocktail bar is positioned upstairs and the XO Bistro Wine Bar on the ground level, with the XO Cellars adjoining into the restaurant.

Collins engaged the work of local and innovative Architect, Andrew Bock. Using his broad range of skills and renowned for his award winning projects, Bock recreated the Sunshine Beach restaurants and bottle shop location into three sophisticated and inviting venues.

Andrew worked alongside Interior Designer Lisa Page (LPID) creating an impressive fit out for the two restaurants and bottle shop, all with individual first class presentation and fittings. Each XO venue has its own stylish individuality, whilst having a clear connection between all three. Lisa said “Designing the interiors for the venues was the most exciting challenge for me. I researched restaurant decor worldwide, including travelling to Las Vegas and visiting new cutting edge multi-million dollar restaurants. I brought back and applied a look and feel to these incredible venues that will be unique to the Sunshine Coast.”
